Demerutis calls the menu at El Dorado simple, featuring tacos, burritos and quesadillas.
"It's not your typical Mexican or Tex-Mex that East Coast people are used to," he said. "Everything is made fresh to order, and everything is made from scratch on the premises every day, from the salsa, to the beer batter, to the desserts."
Specialty burritos are also a hit, Demerutis said. The Puerto Vallarta burrito combines grilled shrimp and spicy chorizo, while the Cozumel burrito has grilled mahi and scallops. Both of them have guacamole, romaine lettuce, chipotle and pico de gallo. A veggie burrito is also available featuring grilled or beer-battered tofu.
Another popular pick is the ceviche, made with mahi marinated in lime juice and mixed with tomato, onion and cilantro.
And if you're looking for a beverage, in addition to a number of Mexican beers, El Dorado prepares homemade sangria and margaritas made from scratch.
